Florence fennel, variety Fino, sold with the fronds entact (for use as herb or garnish). Their fine aniseed flavour is in our humble opinion best enjoyed raw, but they are also superb braised in a tomato-based sauce; the leaves can liven up a salad, added finely chopped.
