Freshly harvested perpetual spinach, also known as leaf beet and similar to chard. The variety is Everglade, selected as it’s particularly *spinachy* with a higher leaf-to-stalk ratio. During the summer months it’s an excellent alternative to true spinach which is hard to produce at this time of year as it bolts very quickly. A hugely underrated vegetable, we have it with nearly every meal wilted in butter, which only takes a couple of minutes so it’s extremely convenient.
