What is Kombucha?Kombucha has been around for thousands of years. It is thought to have originated in the Far East, and has been consumed there for at least two thousand years. The first recorded use of kombucha comes from China in 221 BC during the Tsin Dynasty. It was known as “The Tea of Immortality”.

Did you know that your mood and behaviour can be affected by your gut health? And that our gut contains 70 percent of our immune system? Research has shown the gut microbiota influences brain chemistry and behaviour. For example, people who suffer from irritable bowel syndrome and the associated cramping, abdominal pain, bloating, gas, diarrhoea and constipation, commonly suffer from depression and anxiety as well. Gut microbiota influences serotonin and dopamine production. More than 90% of the body’s serotonin is found in the gut. Serotonin is a key regulator of gastrointestinal mortility. Probiotic drinks such as kombucha and kefir support the balancing of gut health.

But there’s sugar in it?

Sugar is used by the yeasts during fermentation, and is broken down and transformed into acids, vitamins, minerals, enzymes and carbon dioxide. Sugar is also involved in the propagation of the Kombucha culture. It uses the sugar to build the SCOBY (Symbiotic Culture Of Bacteria and Yeast).

At the end of the fermentation period, if done correctly, the sugar will virtually all converted and there should be little or no sugar left in the kombucha. Chlorine added to water supplies to kill harmful bacteria will, unfortunately, also affect the millions of friendly bacteria in Kombucha. That’s why the water we use for brewing Forest Kombucha has been filtered and boiled, before fermentation, to reduce any harmful toxins. Kombucha contains traces of alcohol which is a necessary part of the fermentation process.

Forest Kombucha isn’t going to magically fix your digestive system overnight or suddenly induce weight loss. As an adaptogen, it will however, help feed the friendly bacteria in your gut, which in turn translates to improved overall health. The gut has 100 trillions of bacteria cells which impacts so many other systems in our bodies – so a healthy gut is at the core of our overall health!
